Dinner recipes, Paneer, Side Dish for Roti

ACHARI PANEER

Paneer recipes are most liked by Dhivya and I often include paneer in her diet. It was sometime back I made this recipe and it turned out be creamy and tasty. Flavoured with spices that are used in the North Indian pickles this is a delicious gravy made with cashews and melon seeds. I have made this with mild spices and this can be made with ingredients easily available at home. There a few recipes of Paneer in my blog and this one is adapted from Tarla Dalal website.There are two versions in this. You can make this with or without gravy. Both taste equally delicious. The non gravy version can be served as a starter as well. This recipe with gravy can be served with rotis, naan and phulkas. I have made Garlic Naan here. It was totally addictive and it vanished in no time.

The spices added here are a few which are carefully roasted and ground. The Texture is creamy owing to the addition of curd. You might as well add cream. The cashews and melon seeds add richness to the gravy. When preparing for guests  you can make the pastes in advance and use it as and when required. You can as well make it more spicy by adding a few ingredients in the list more. I made this mildly spiced and that worked fine for me. It is the most aromatic recipe with spices complimenting the curd and soft panner alongside. You can make achari masala well in advance and use it for a wide range of recipes like Achari Arabhi and so on. Instructions
  1. Dry roast the ingredients given in the "to roast and grind" table.
  2. Roast till nice aroma comes.
  3. Once cooled place it in a blender.
  4. Grind to a powder.
  5. Set aside the powder.
  6. Place cashewnuts and melon seeds.
  7. Powder it finely.
  8. Whisk curd.
  9. In a pan add oil and red chillies.
  10. Add green chilly and ginger paste.
  11. Fry a bit.
  12. Add tomato puree.
  13. Add coriander powder, red chilly powder and turmeric powder
  14. Cook well.
  15. Add cashew melon seed powder.
  16. Mix well.
  17. Add pickle powder.
  18. Mix well.Add kasuri methi.
  19. Add curd.
  20. Add chopped paneer pieces.
  21. Mix well and cook for a while.
  22. Add salt, mint and coriander leaves.
  23. Mix well.
  24. Serve hot with rotis or naan.
Recipe Notes

You can fry onions and grind it and later add to the mixture.

You can use fresh cream in place of curd.

You can add chopped tomatoes and grind and add to the mixture.
