ARISI VELLA PUTTU/NAVARATHRI RECIPES

 

Arisi Vella Puttu is a traditional sweet made in the tamil households on Navarathri Fridays.It is a steamed and soft sweet and tastes awesome with jaggery and coconut flavours.I am happy to share with you all that this recipe was published in the Chennai edition of The Hindu Metroplus last Friday. Usually sundals are prepared during Navarathri but at the same time this puttu is also offered to the GODDESS.You can also make puttu with rice flakes or aval which I intend to post later.So readers,here comes the tasty aromatic puttu for the festive season.

Instructions
  1. Soak rice in water for an hour.
  2. Drain and spread on a clean cloth.
  3. Place the rice nicely in a mixer.
  4. Grind to a powder.
  5. In a pan dry roast the rice flour.
  6. Roast till it gets golden brown colour.
  7. Meanwhile boil some water with a turmeric powder.
  8. Sprinkle the turmeric water on the rice flour.
  9. Mix well.
  10. Steam the rice flour in an idli mould for 10 minutes.
  11. Meanwhile make a jaggery syrup until hard boil consistency,i.e. when you drop a ball of jaggery syrup in bowl of water and when you take it out,it should form a ball.
  12. In a plate add steamed flour,grated coconut and cashewnuts fried in ghee.
  13. Mix well.
  14. Arisi Vella Puttu is ready.

Notes

  • When you mix rice flour in water,the consistency should be such that when you hold it,it should retain it’s shape and when you crumble it it should fall away.
  • You can check the jaggery consistency by adding it in a bowl of water and roll it in to a ball.
  • You can add edible camphor too alog with cardamom powder.
