MOHAN THAL/GRAM FLOUR FUDGE

 

Mohan Thal is actually a dessert from Rajasthan where sweets are eaten at almost any time of the day.It is a gram flour based fudge, but unlike it’s south Indian cousin Mysore Pak it has a crumbled consistency and the taste is simply unique and awesome.It is also served as prasad in many temples in north India and so can be called as sweets for the GODS.I had this at my north indian friend’s wedding many years back and the taste still lingers in my tongue.This recipe was given to me by my mother from a cookery magazine.It doesn’t sound that much tricky as it looks, do give it a try you’ll be pleased with texture it gives in the end.

  1. Melt butter to ghee or if using ghee pour it in a pan.Add gram flour by slightly roasting it to a golden brown, making sure it doesnu2019t turn black.
  2. Mix well without lumps so that a nice crumbly texture is formed.
  3. Mix unsweetened khova and mix well.
  4. In another pan maker a syrup with sugar and water and boil till 2 thread consistency comes.Also add the cardamom powder now.
  5. Now add the gram flour mixture and mix without forming lumps.
  6. When it starts leaving the sides of the pan switch off the flame.
  7. Transfer it to a ghee greased tray.
  8. Immediately add chopped nuts so that they stick to the fudge while still hot.Cut into 1 inch squared shapes.
  9. Enjoy this sweet anytime of the day.

Notes

  • Instead of khova you could use milk powder as well.
  • You can keep this sweet in an air tight container and keep it refrigerated for about 2 weeks.
  • Usually it takes 2-3 hours for the fudge to set,so don’t be in a hurry to take them out.
